Aseptic Mango Pulp
Commercially processed mango pulp in aseptic packaging — most widely used form in the Indian beverage industry. Available in 200-litre drums or large pouches. 12–18 months shelf life ambient. Consistent quality, year-round availability.
Key parameters to specify: Brix (typically 14–18° for good quality aseptic pulp), acidity (0.3–0.6% as citric acid), colour (a° and b° values for colour consistency), microbial counts.
Supplier verification: Always request Certificate of Analysis (CoA) with Brix, pH, colour, and microbiological data from your pulp supplier — and verify against your specification with each batch.
Mango Concentrate (MFC — Mango Fruit Concentrate)
Mango pulp with water removed — typically 28–32° Brix. Reconstituted for production by adding water back to target Brix. Lower cost per kg than aseptic pulp (less water weight to ship/store). Slight flavour compromise from concentration process.
Best for: High-volume commercial production where cost efficiency is priority and slight flavour compromise is acceptable.
Mango Powder (Spray-Dried)
Dehydrated mango — powder form. Used in powder premix products. Not typically used for RTD beverages due to reconstitution texture challenges.
FSSAI Product Standards: Juice vs Nectar vs Drink
This is one of the most important and most misunderstood areas of mango beverage compliance. FSSAI has specific standards for different mango beverage categories — and the product name on your label must match the actual product composition.
Mango Juice: Minimum 85% mango content. No added water beyond what is in the mango (i.e., essentially pure mango juice). No added sugar. Very high Brix.
Mango Nectar: Minimum 25% mango content. Water may be added. Sugar or honey may be added. “Mango Nectar” is the correct label for most premium commercial mango beverages.
Mango Drink / Mango Beverage: Below 25% mango content. Most mainstream Indian mango drinks (Maaza, Frooti, Slice) fall here. Must be labelled as “mango drink” or “mango flavoured beverage” — NOT “juice” or “nectar.”
NFC Juice (Not From Concentrate): Juice made directly from fresh fruit without concentration/reconstitution steps. Permitted as a premium category claim if the product genuinely meets NFC production standards.
Critical compliance point: Labelling a low-mango-content drink as “mango juice” or showing deceptive imagery of fresh whole mangoes on a drink with 10% mango is non-compliant under FSSAI labelling regulations. Get your product category right before designing the label.

For a smooth-texture commercial product from Totapuri or similar, centrifugation or fine filtration removes fibre particles. Processing and Shelf Life Options
HTST Pasteurisation + Hot Fill: Standard commercial process. Heat at 90–95°C for 30–60 seconds, hot fill into bottles at 80–85°C, seal, invert, cool. 9–12 months ambient shelf life. Most cost-effective for volume production.
UHT + Aseptic Fill (Tetra Pak): 135–140°C for 2–4 seconds + aseptic fill. 12–18 months ambient. Required for large-volume distribution. Slight flavour impact.
HPP (High Pressure Processing): Cold processing. Best flavour and nutrition retention. 30–60 days refrigerated. Premium NFC mango juice positioning.
